Pumpkin Date Energy Bites

‘Tis the pumpkin season so make use of it by trying these delicious Pumpkin Date Energy bites!

These bites are low in fat and have a good balance of carbohydrates and fibre making them great for a pre-training and during training energy boost. Pumpkins are an excellent source of vitamin A, an antioxidant that support vision and the immune system; and a source of potassium, an electrolyte that helps keep fluids in your body (basically maintain your hydration).

What You’ll Need

  • 12 Mejool dates, pitted

  • 1/3 cup plain pureed pumpkin

  • 1/3 cup whole pecans

  • 1 cup large flake oats

  • 2.5 tsps. pumpkin pie spice

  • 2 tbsps. flax meal

  • 2 tbsps. maple syrup

How To Make It

  1. In a bowl, combine pitted dates and pour boiling water over them until covered. Let them sit for 5-10min to soften.

  2. Once dates are softened, drain and transfer to the food processor. Process until they form a thick paste.

  3. Add all the remaining ingredients to the food processor and start blending. The mixture might get stuck in the beginning and when that happens, you can fold the mixture inward to make sure you are blending all of it equally.

  4. Process until you get a homogenous consistency but still visible chunks of the ingredients. Roll into 1 inch balls and place on a flat plate or baking sheet. Recipe should give ~22 bites.

  5. Refrigerate for 30min until bites get harder and you can then transfer to an airtight container. Keep refrigerated until you want to enjoy them!
