Cranberry Coconut Energy Bites

No food processor needed for these easy energy bites. Just a bowl, spatula and your hands to roll into balls! Perfect recipe to add to your pre-training or during training snack list.

Cranberry Energy bites

What You’ll Need

  • 3/4 cup smooth natural nut butter (I used peanut butter)

  • 1.5 cups large flake oats

  • 1/3 cup liquid honey

  • 1/3 cup dried cranberries

  • 1/3 cup unsweetened coconut shavings

  • 2 tbsps. chia seeds

How To Make It

  1. In a large bowl, mix all ingredients with a spatula.

  2. Roll into 1 inch balls and place on a flat plate. Recipe should give ~20-22 bites.

  3. Store in the fridge for 30min to 1h to let it set. Then enjoy and transfer the rest to an airtight container and keep refrigerated.

Recipe Tips

  • Use for pre-training: eat 1-2h before training or in between training session; at break time or during rides.

  • Bites will stay fresh in the fridge for up to 7 days.
