One Pan Garlic & Lemon Baked Chicken

One of the easiest dinner meals you’ll ever have to cook, no chef skills required for this one pan garlic & lemon baked chicken! A complete meal for athletes providing protein and quality carbohydrates.

Garlic Lemon Baked Chicken

What You’ll Need

  • x4 Chicken breasts

  • x2-3 Sweet potatoes or Yukon potatoes, or a mix of both, cubed

  • 5 tbsps. Olive oil

  • 4 tbsps. Lemon juice or juice of 2 lemons

  • 8 Garlic cloves crushed

  • 1 tsp Salt

  • 1/2 tsp Pepper

How To Make It

  1. Preheat oven to 350 degrees F.

  2. In a small bowl mix the olive oil, lemon, salt, pepper and garlic. Line up the chicken breasts in a glass baking dish and add the potatoes. Pour the lemon garlic sauce over the chicken and potatoes. Cover with aluminum foil to prevent the chicken from drying out.

  3. Cover the dish with aluminum foil to prevent the chicken from drying out. Bake for 35-40 min until the chicken is fully cooked through (no visible pink areas when you cut through the chicken or thermometer reading of 165 F or 75 C when inserted in the thickest part of the chicken).

Recipe Tips

  • This recipe is very versatile, and you can switch up the sauce ingredients to your preference. If you’re not a fan of garlic, feel free to either cut down the amount or remove completely and sub with your favourite spice mix (e.g. Italian, French mix).

  • Fresh rosemary would also work great with this recipe, just mix them in the lemon sauce or sprinkle on top of the chicken and potatoes before baking.
